Pumpkin Bread

Owen eats this for breakfast, dessert and any time in between. His favorite go to snack. (Adapted from Pillsbury: The Complete Guide of Baking).

2 cups all purpose flour
1 1/2 cups white wheat flour
3 cups sugar
2 teaspoons baking soda
1 1/2 teaspoons salt
2 teaspoons cinnamon
1 teaspoon nutmeg
1 cup oil
2/3 cup water
4 eggs
1 16 oz. can pumpkin (1 1/2 cups)
1 1/2 cups chocolate chips (optional)

Heat oven to 350 degrees. Grease bottom only of two 9x5-inch loaf pans or three 8x4-inch pans. In large bowl, combine all dry ingredients. In medium bowl, combine oil, water, eggs and pumpkin; blend well. Add to flour mixture; beat one minute at medium speed. Fold in chocolate chips. Pour batter into greased pans.

Bake at 350 degrees for 50-60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans. Cool completely.
